Whenever I return to Japan, there is one small ritual.
Doria or gratin.
Doria — a Japanese-style baked rice dish topped with béchamel sauce and cheese — is something I always order when I return to Japan.

It is less about choice and more about tradition.
For this visit, I ordered the seafood gratin lunch (¥2,200).
The consommé soup was carefully prepared — clear, balanced, quietly elegant.
The béchamel carried proper seafood depth.

Most importantly, there was none of the unpleasant frozen seafood smell that sometimes appears in casual gratin dishes. The ingredients were handled properly.
